Chambert 2007 - Superbe (Joanna Simon)

FR: Chambert 2007 est un exemple d'excellence de Malbec de Cahors. Joanna Simon, journaliste anglaise (Sunday Times, BBC 4,Classic FM magazine, Decanter, Jamie, Harpers Wine & Spirit, Square Meal and Waitrose Food Illustrated) recommande fortement nos vins. Pour ceux qui lisent l'anglais, voici ses commentaires:

EN: Two Cahors to convert the reluctant. Anyone who is a fan already (or becomes one) should consider laying down some of Château de Chambert’s excellent 2007 Grand Vin, even though owner Philippe Lejeune and consultant Stephane Derenoncourt say that the 2008 wines are better and the 2009s better again. The 2007 will easily keep another ten years.

2007 Château de Chambert Cahors Malbec

Ink-dark, dense and ripe, with a plum and blackberry perfume, light smoky oak, thick but ripe, velvety tannins and a mineral-fresh finish. Try it with confit de canard (a doddle to make, by the way) or a steak. Or cellar it for another five or more years. 13% abv.

Chambert & Opus One & Apple (?!)







FR: De passage sur la Californie, c'était l'occasion de visiter la Napa valley et aller déguster quelques références locales. Sur une journée, j'ai donc fait un petit tour avec des amis pour aller voir: Opus One, Ladera, Quintessa, Darioush. Une partie de cette sélection était pour gouter des Malbec autres que Chambert (et donc comparer Cahors à Napa). La première visite était Opus One, le fameux vin/collaboration lancé par Robert Mondavis et le baron Philippe de Rothschild. Les chais sont organisés pour un travail par gravité (tri des baies à l'étage, chargement par les hauts de cuves arrivant au ras du premier étage, écoulement dans les barriques au rez-de-chaussée). La dégustation était Opus One 2006, $195 la bouteille: le vin avec 3% de Malbec! (77% Cabernet sauvignon, 12% Merlot, 5% Cabernet Franc, 3% petit verdot, et 3% Malbec). Le vin a un peu tardé à s'ouvrir, mais en fin de dégustation le spectre des parfums et la complexité étaient bien plus facile à appréhender. Un beau vin pas trop marqué par le bois et agréable à boire...mais manquant d'un petit Peps de fraicheur à mon gout, avec une tartine de rillettes ça passerait mieux?! Belle visite, et surtout un bon process de production et contrôle qualité. Pour info: le laboratoire d'Opus One n'a pas de PC mais un Mac, on peux donc dire que: Opus One descend d'une pomme!


EN: As I was in California meeting friends, we organized a one-day tasting tour in Napa valley. We selected: Opus One, Ladera, Quintessa, Darioush. Some of thew were picked for their Malbec so I could see how it compares to Chambert, kind of Cahors vs Napa tasting (well Cahors are not all alike, and same for Napa: terroir & men have their say). So first visit was Opus One, the famous Robert Mondavis and baron Philippe de Rothschild. Winery is well organised so to use gravity only (berries sorting on first floor, then poored into vats in ground floor, then wine going to barrels on the ground floor too). Tasting was on Opus One 2006, $195 a bottle with 3% Malbec! (77% Cabernet sauvignon, 12% Merlot, 5% Cabernet Franc, 3% petit verdot, 3% Malbec). The wine took some time to open up but while tasting got to the end, we could clearely appreciate the spectrum of flavors and the wine complexity. It is a very pleasant wine, not loaded with aok, nice to drink by the glass! Personnaly I'd have enjoyed it more if he had a bit more of freshness, it lacked a bit of peps on that front, just my personal taste. It would have probably done better with some toast! It was a very nice visit, and we could see all the work at having a perfect production process and quality control. BTW: Opus One lab is NOT running a PC but a Mac, so we can say: Opus One comes from an apple!

Vin bio / Organic wine @ Chambert


FR: Quand, en 1100, les vignes poussaient à Chambert, nul doute que c’était Bio. De 1690…jusque 1880 quand le général Bataille s’occupait des 400 ha de vignes à Chambert, nul doute que c’était Bio … puis, le phylloxera a détruit le vignoble de Chambert, Bio toujours … En replantant le domaine en 1974,
le propriétaire de Chambert, en précurseur, était aussi dans cette même philosophie (compost de cheval, pas de désherbants, …). Chambert est Bio de par son histoire et le restera ! Cette année, nous avons décidé d’officialiser une pratique Bio de dix siècles : Chambert a lancé sa certification chez Ecocert, premier
certificateur Bio. C’est un processus de trois ans (nous enchainerons sur la certification Demeter puisque nous travaillons suivant les principes de la biodynamie) . De fait, le Chambert 2012 sera le premier millésime labellisé Bio. Bien entendu Chambert n’a pas attendu ce label pour travailler sainement et notre approche qualitative reste centrée sur un travail exigent et éthique, pas sur des labels ! Cette officialisation va cependant aider aux ventes dans certains pays qui vont exiger ce label pour importer le vin (tendance naissante mais qui se développe). La finalité de cet engagement pour Chambert, reste le respect du terroir, de l'environnement et du consommateur. Nous croyons dans le respect total du terroir, de la vigne et de la vinification du raisin pour la meilleure expression dans nos vins. Dans un prochain billet, nous couvrirons en détail la culture de Chambert et les bénéfices de la biodynamie, mais aussi les défis impératifs à relever: s'affranchir de l'usage de cuivre...tout un programme!
EN: The vines that were growing at Chambert back in 1100 were undoubtedly « organic ». From 1690 up to 1880, when General Bataille was farming almost 1000 acres of vines, the vineyards were organically grown. Then phylloxera destroyed everything (that was also « organic » !). When replanted in 1974, Chambert's owner was a modern pioneer when he used horse compost and no chemical weedkillers. Chambert is traditonally organically farmed and will remain so! This year I decided to officialise what has existed for ten centuries, and Chambert has begun a certification process with Ecocert, the largest organic certification organisation (then we'll go for the Demeter certification as we're working in biodynamics) . This will take three years, so the first vintage that could carry the label will be 2012. Of course Chambert has always been working in a respectful manner and remains focused on a painstaking work ethic, not on labels. Yet making this process official will assist sales in some markets which, increasingly, require guarantees for organically grown vines behind wines. The ultimate stage of this commitment by Chambert is the terroir, environment and consumer respect. We believe in total respect for the environment, for the vine and for the wine-making process in order to make our wines express this to the full. In a future post, we'll detail Chambert's practices & the benefits of biodynamics but also its challenges such as eliminating the usage of copper...

Jamie Oliver @ Chambert (Photos)



FR:Si vous ne connaissez pas Jamie Oliver, lisez déjà ceci! C'est bon à présent, vous situez?! Ainsi, Jamie Oliver nous faisait l'honneur de venir à Chambert pour passer deux jours avec son équipe. Au programme: des films et photos pour des émissions TV à venir, des livres de recettes, et son magazine.
EN: If you've never heard about Jamie Oliver, read this first! Do you get it now?! So we were delighted to receive Jamie Oliver and his team for two days. His mission: shoot films and pictures for his TV shows, recipe books and magazine.

FR: Après une grosse séance vidéo devant le château à présenter ses recettes, Jamie vient découvrir le chai de Chambert et ses 800 barriques dans lesquelles vieillissent doucement les 2008. C'est le moment de déguster tous les 2007 et partager de bons moments...le tout est filmé par l'équipe de Jamie et devrait être visible en 2010 une fois le montage vidéo terminé.
EN: After a long shooting by the castle (shooting recipes), Jamie discovers Chambert's cellar where 800 oak barrels hold the 2008 vintage. It's time for a good tasting session and enjoyable moments...all is recorded by Jamie's team and should be released in 2010 when the movie is finished.

FR: Le soir tombé, et une fois la dégustation des vins terminée ; on remonte tous pour une deuxième séance de recettes. L'éclairage donne de très belles couleurs. L'enregistrement final devrait être superbe!
EN: At sunset, once the tasting session is over we all come back outside for a second shooting session. Lights are grand, the video should be great watching!


 
FR: Jamie et l'équipe travaillent vite et bien; ce sont des pros rodés à cet exercice depuis plus de 15 an!

FR: Nous regardons Jamie travailler ; la fatigue nous gagne en cette fin de journée. Pourtant c'est Jamie qui a eu une courte nuit de 2 heures!
